Nozawana is famous as a pickled vegetable in Nagano Prefecture. In the Iida-Shimoina region Gensuke turnip pickles, which have been popular since the Meiji period, It has been passed down. It is also known as Iida turnip greens. The leaves are larger than those of Nozawana. Gradually, the pigment anthocyanin increases. It will be purple 🟣 Furthermore, by exposing it to sufficient frost, the flavor is enhanced. The characteristic of this product is that the leaves and stems become soft!
